Tomatoes


Tomatoes are a great salad stand-in when you are tired of the same old greens. The tomatoes in the store seem to be really good right now as well, so now is a good time to load up on tomatoes and all of their vitamins and minerals! My favorite tomatoes for a tomato salad are heirloom tomatoes. They are more expensive but worth the splurge due to the terrific flavor. A close second when heirlooms are out-of-reach are cluster tomatoes on the vine (as pictured above). Here are some ideas for quick tomato salads to add to your fall dinner menus:

  • Layer sliced tomatoes and bufula mozzarella and top with Basil Pesto, salt, and pepper. You can also substitute whole basil leaves and drizzle with a little olive oil and balsamic vinegar as well.
  • For Mexican food, slice tomatoes and top with chopped avocado, queso fresco, salt, and pepper.
  • Slice tomatoes and top with shaved parmesan cheese, a touch of olive oil, balsamic vinegar, salt, and pepper.
  • Top sliced tomatoes with blue cheese, gorgonzola cheese, or any other pungent cheese. Lay on a small bunch of arugula and drizzle with olive oil, balsamic vinegar, salt, and pepper.
